2 cups of all purpose flour (maida)

4 tablespoons ghee

  • 1 cup dry fruits (almonds, kashmiri cashew, a handful of raisins and pistachios)

  • ½ cup of ground sugar and ½ cup of crystal sugar(with love and affection of course)
  • 1/2 teaspoon of cardamon powder
  • Fried coconut oil or refined oil

For Frying and Decorations

Ghee or butter (for deep frying)

  • Slivers of pistachios

How to Make Mawa Gujiya at Home: Easy Recipe

Step 1 : Dough Preparation

Use a large bowl and pour in 2 cups of maida. After hand, add additional ghee and cashew nuts to the mix, rub a little ghee (clarified butter) so it blends together to obtain that crumb mix. It’s stirring time!
Once the dough has reached desired consistency, don’t forget to cover it, keep it aside for 30 min.

Step 2 : Filling (Infused with love)

et kadhai ready with a medium flame. It’s time to pour in good amount of ghee. Add Mawa/khoya. Once it gets evenly fluffed, add sugar(half grounded- half crystal). Avoid too much sugar as it may cause the filling to leak out of gujiya while frying.  Add all the  dry fruits and roast well. Add 2 tablespoons of coconut cream / ½  cup of grated coconut and sprinkle 1/2 teaspoon of cardamon powder.

Get a Non-Stick Kadhai ready with a medium flame. It’s time to pour in good amount of ghee. Add Mawa/khoya. Once it gets evenly fluffed, add sugar(half grounded- half crystal). Avoid too much sugar as it may cause the filling to leak out of gujiya while frying.  Add all the  dry fruits and roast well. Add 2 tablespoons of coconut cream or ½  cup of grated coconut and sprinkle 1/2 teaspoon of cardamon powder.

For best results wait until the desired crispiness is achieved. Always keep stirring to balance out the heat. Turn the gas off once it gets golden in colour.

Step 3: A perfect shaped Gujiya for Holi

Now, roll the dough in circular shape(like a mini chapati). Make sure that you only put a spoonful of filling in the center of each circle as over stuffing is more difficult to fix than you might think, or it may lead to spilling out of the filling into the ghee.

Take the cut circle of dough and fold it into a half moon shape, ensuring that the edges are sealed. Press either softly or firmly and if you want an even output, use a gujiya mold/machine. You can also use a fork to create decorated edges if you lack a mold.

Step 4: Frying Your Gujiyas

Add the ghee or oil into a deep pan. Insert a small piece of dough into the oil and if it bubbles immediately, you know it’s hot enough.

On medium flame, fry the Gujiyas until each batch is golden brown and crispy.

Baking your Gujiyas:

Another method is to bake the Gujiyas at 180 degrees Celsius and 350 degrees Fahrenheit for 20-25 minutes brushed with ghee until crisp.
